    5101:2-14-32               Meal  preparation/nutritional  requirements  for  professional certification as a type B home provider or in-home aide.

     

     

     

    (A)    The provider is responsible for serving varied, nutritious, and appropriately timed meals and snacks which meet the "Child Care Food Program Meal Requirements" as administered by the Ohio department of education. When preparing meals the provider shall store and serve foods in a safe and clean manner.

     

    (B)   The type B home provider shall provide the food for the preparation or serving of meals and snacks to the child, unless the parent caretaker chooses to send meals. The type B home provider shall be responsible to supplement any meal or snack the parent sends to that the meal or snack meets the "Child Care Food Program Meal Requirements" as administered by the Ohio department of education. The in-home aide and the parent caretaker shall have a written agreement, using the ODHS 1634 "Parent/Provider Agreement" JFS 01634 "Caretaker/Provider Agreement", regarding who will provide the food served to the in-home aide, the in-home aide's children who may accompany the in-home aide and the child receiving in-home aide services.

     

    (C)   The provider shall have physician's written instructions for administering a modified diet or food supplement to any child.

     

    (D)  When a provider is caring for infants the provider shall:

     

    (1)    Comply with written instructions from the parent caretaker or physician for feeding infants which shall include the following information:

     

    (a)   Type of food and/or formula;

     

    (b)   Amount of food and/or formula; and

     

    (c)   Feeding times.

     

    (2)Follow the "Child Care Food Program Meal Requirements" as administered by the Ohio department of education if the parent does not provide feeding instructions.

     

    (3)(2) Store, prepare and serve breast milk, food and formula in a safe and clean manner. Breast milk and formula shall be stored for no longer than twenty-four hours. Formula, breast milk or other liquids in a bottle shall not be heated in a microwave oven.

     

    (4)(3) Inform the parent caretaker that infant food and formula shall be provided by

     

     

     

    the parent unless otherwise mutually agreed upon by the parent caretaker and provider as designated in the ODHS 1634 "Parent/Provider Agreement". JFS 01634 "Caretaker/Provider Agreement".

    (5)(4) Keep a quantity of the specified type of formula each infant in care is fed available in the type B home in case the parent caretaker does not provide the daily amount of formula.

    (6)(5) Remove the infant from his crib for all feedings. Infants shall be held or fed sitting up for bottle feedings. Bottles shall not be propped during feeding.

    (7)(6) Introduce new foods only after consultation with the parent caretaker.

    (E)     The provider and the children shall thoroughly wash their hands with soap and running water after using the toilet and before handling food or utensils.

    (F)   Milk and milk products used or served shall be "Grade-A" pasteurized.

    (G)    Potentially hazardous foods such as, but not limited to, milk, milk products, eggs, meat, poultry, fish, cooked rice, baked or boiled potatoes shall be refrigerated at a temperature at or below forty-five degrees Fahrenheit.

    (H)    Eating and drinking utensils and meal preparation and serving areas shall be clean and safe.

    (I)    The home shall have both hot and cold running water. The temperature of the hot water shall not exceed one hundred twenty-five degrees Fahrenheit unless the provider demonstrates to the satisfaction of the county director CDJFS that the hot water faucet can be made inaccessible or inoperable when children are in care.

    (J)    The water supply shall be of safe and sanitary quality. Water that is not publicly supplied must be sampled by the local health department and determined to be safe by an approved laboratory. The water must be sampled prior to initial certification of the type B home or receipt of in-home aide services and annually thereafter. A copy of the test results shall be kept on file at the type B home or the home of a child receiving in-home aide services.

    (K)   The premises shall be kept in such condition as to prevent the infestation by insects or rodents.

    (L)  On-site sewage disposal systems shall not present a public health hazard.

    (M)   The in-home aide shall wash dishes used while providing child care services.
